Generally, light soy sauce is made with a high salt content and finished in a short period of time to make the color as light as possible. However, Katayama light soy sauce is made to be as high in umami as possible while maintaining a color that is just barely within the definition. As a result, this light soy sauce can be used not only for cooking, but also for pouring over food such as silken tofu.
